michelle/pearl: i would consider the themes to be of lesser importance. if we'd the numbers to go for pacific ballroom, i would dare say the theme wouldn't be of any issue as the ballroom itself is already great.
but as we do not have the numbers, we could only opt for ocean ballroom. the ceiling is rather low and as of now they only have white lights. but to me, if the themes given aren't attractive enough, it could be further enhanced by, perhaps, more floral arrangements even at our own expenses.
what is more important would be the food quality & quantity. if we're dining at hai tien lo, then the ambience would help a lot; but we're dining in the ballroom with no city-view. i wouldn't say the quality isn't good, but to be fair, i'm sure the great view at 37th floor helped to contribute to many praises for food at hai tien lo.
need to bear in mind that our relatives/friends are in a way "paying" for the food, so kinda scary to leave the food quantity until food tasting. it would be kinda late by then, in my view.
we could still remedy the theme by enhancing it further ourselves, but if the food portion is quite beyond our control, especially if the top-up becomes substantial.
we tried out the shark fins with crab meat & braised baby abalone with sea cucumber & seasonal greens at hai tien lo (not the food tasting). the shark fins portion were generious ($32/bowl). but the actual banquet won't be of this amount; nevertheless, even with a 10-15% lesser amount, the shark fins are still good.
it is really the braised baby abalone that is a headache. they're kinda thin. with dazzle being the most expensive package, was really hoping for it to be at least comparable to the baby abalone at swissotel or raffles.
