This week has been a totally frustrating week (I am having my wedding dinner this Saturday) for me because the last minute changes Pauline is attempting to "persuade" me to have. A few examples are:
1. She promised us a topiary (fresh floral arch) within the contract but when she got the quote from the florist for it (we had already chosen the cheapest flowers available according to the florist), she wanted us to "help" her with it.
2. She urged us to have only 1 reserve table even though within our contract we had request for 2. Her reason being that it would be wasting 2 tables of food if we do not utilise the tables. However, we require the 2 reserve tables in case of any changes in guest attendance. Then she turned around yesterday and told us that she will only be preparing food for my guaranteed tables and if we wanted to utilise the reserve tables, we must inform her by 7:30 pm!?!?!
During the food tasting, the food was delicious. Hopefully, the quality on my AD will remain or surpass the food tasting one.
We are estimating about 5 hours for our solemnisation, cocktail and wedding dinner. If you are having a wedding lunch, perhaps it will be much shorter. My friend's one (not in Peony Jade) lasted nearly 4 hours.
I am not sure if there is a cocktail session for wedding lunch as we are having a wedding dinner.

We tasted the 6 dishes from our wedding dinner menu. At first, Pauline was not willing to let us taste the sharksfin. However, when we requested, she gave in... The only things we did not taste was our first dish (cause it's a whole suckling pig), the rice dish and the desert.

I would advise you to put all details discussed with Pauline into the contract. Everything nitty gritty should be inside so that there is no room for errors, miscommunication and last minute changes. Also, I would advise against paying the deposit until after you are fully satisfied with the contract and Pauline and yourself or your FH have signed on the dotted line.
