Pad Thai Recipe
Uncooked wide rice noodles
Less than half a cup of lime juice
Less than half a cup of water
3 tablespoons fish sauce
1 tablespoon rice vinegar
3 tablespoons sugar
2 teaspoons peanut oil
2 cloves garlic, finely minced
1 shallot, finely minced
1 boneless skinless chicken breast, cut into small pieces
1 cup peeled shrimp ( hae bee ), cut into small pieces
1/2 cup beaten egg
1 cup unsalted peanuts, roughly chopped
Bean sprouts
1 sliced onion
Corianda leaves
Cover noodles with boiling water. Soak 20 minutes or until soft but not fully "cooked". Drain and put them aside. Combine lime juice, water, fish sauce, rice vinegar, sugar in a bowl.
Heat your pan ( medium fire ) with oil, garlic, shallots and chicken and cook until chicken is almost done for about 3 to 4 minutes. Add shrimp and continue cooking another 3 or 4 minutes until shrimp is mostly pink. Add beaten egg, stir and scramble until just moist.
Add noodles, fish sauce mixture, peanuts, sprouts and onions and toss until evenly coated. Add the corianda leaves and cook until noodles are tender and chicken and shrimp are done, about 3 to 4 minutes more. Ready to eat!
