A REAL WEDDING CAKE

Hello blueice, I'm honoured that you think my cake looks nice.
happy.gif
To be honest, i am in the process of working out a pricing scheme for my cakes. It will be on my website when it's done.

But if you want to know the market price for that cake, you might check out Cake Avenue's website. they have a pricing there. For fondant cakes, they charge $45 per kg for cake (excluding the extras like transportation, etc.)

So for you to have a rough idea, as i mentioned a couple of posts ago, this pink roses cake was 21 kg.

(Of course, i don't know if Cake Avenue's cakes are as heavy as mine... I do double layers of cake. I love a robust cake.)

blueice, for your no. of guests, you may need more cake (than the one in the pic)if each guest were to have a piece.

Dear all,

Below is an email which I received from Sue75. She has been banned from the forum and wont be able to post here.

I would like to clarify upfront that i'm not a "full fledged" cake business yet. I will not be doing business "commercially" this year. As I mentioned before, I am a mommie of 4 and these cakes take a long time to produce. I can't cope with kids and business at this time. I honestly did not post here for the intention of garnering business for myself.

Thank you!

Sorry! My email is impossible! I send messages and it doesn't go thru and 'selects' which emails it feels like receiving.

I was also away for the weekend so wasn't checking my email. Glad to see someone managed to post your message!

Hi everyone!

I had my wedding on 7th May and i got my wedding cake from Coffee Bean. It's not a customised one but it's affordable and it looks very beautiful! One pointer is to not let the cake sellers know it's a wedding cake or they'll charge u very high prices. The cake i got from coffee bean is only $55 and i din have to fork out a cent cos I used vouchers i claimed from UOB credit card and used coffee bean points.
And my guests loved the cake. As the cake was only 3kg and I had 40 tables of guests, i told the waitress to cut the cake and leave it at the reception table for ppl to take and my guests (d younger ones) just went to take it.
my cake is "Gift-wrapped" and u can see it from http://www.coffeebean.com.sg/coffeebean/shop_product.cfm?mcat=1&group=3&from=Buy

Hi maggie,

WaH, that cake is nice..it has nvr came across my mind to give the cut to the guests after dinner.
How did you got the guests to take those cut cakes back? Did your hotel or coffee beans provided those boxs?

Hi bubblepearl,

I din give the cake to my guests after the dinner. Once the waitress finished cutting it (somewhere in the 5th/6th dish), my sister (main coordinator) told my emcee to announce that we will like to share our wedding cake with everyone and they can get the cake from the recep table. So no need to provide boxes also.

Hi maggie,

I'm curious.. didn't you run out of cake with 400 guests? I know not everyone would want a slice but
kao_confused.gif

I think wedding cakes are a very personal thing. Some people are willing to spend the prices that Sue75 and I mentioned because they want something very elaborate and/or want everyone to have a slice. BUT! That doesn't mean you have to spend so much to have a nice cake which obviously you proved.

Oh.. I'd also like to point out that its not necessarily true that people will charge you more just because you say the word "wedding"
biggrin.gif

I make cakes (sculpted and wedding cakes) as a second job. (Not in Singapore so moderators please don't block my account)
Even the most "simple" looking wedding cake can get very complicated very quickly. And all take days to make.

Here's a cake I made recently:
368659.jpg

This serves 200 people and I charge approximately S$500. It took me about 48 hours to complete this. The ingredients cost me: S$180.00 So I'm working for about S$6.50 an hour.

That's just to give everyone an idea why these cakes cost so much.

hi squeakers!

thanks for ur info..

juz to check with you someting..

Hi rae

I usually tell people 1kg per 15 guests. You can manage with 10 kg but you have to make sure its cut properly into small portions not the "healthy" full size birthday portion your Auntie would normally give you. Personally, I would probably get 12kg to be sure. But if there is a big price difference for the 2kg, then I say ok.. you can squeeze that many slices out of it. (Plus, not everyone will stay for the dessert, not everyone will attend or even want cake etc)

As for leaving the cake out, even the regular icing cake cannot be left out for very long. It would be the same as leaving some butter out. It melts even faster than butter. If there is a design on it, like flowers, the icing supporting the decor will become unstable and cause things to slide down the cake. Ewwww!

Even though the room might start out nice and cool, once you have everyone sitting down inside and then the hot food brought it the temp can rise quite quickly. The cake can't stand temps higher than about 23 degrees celcius.

Hope that helps!

hi squeakers..

thanks for your advice!
mine is a 3 tier square shaped cake...
16 x 16, 14 x 14, 10 x 10
i'm planning to serve before the dessert.. :p

ooh ok.. so usually couples will present the cake juz before the cake cutting ceremony? i was tinking of displaying the cake before the banquet starts.. haha tink this is not feasible ya? want to show off my pretty cake! kaka..

oh ya have u tried using real flowers on the cake as decor and then put back the cake into the fridge while waiting for the dinner to start? will the colour of the flowers run into the cake itself? my wedding planner was telling me this might happen.. due to condensation.. makes me worried.. coz i'm getting my florist to decorate the cake for me instead of the bakery... and my cake is pure white icing on the outside..

haha sorrie i seem to have 1001 questions.. kaka
really appreciate ur help!

No worries! I love answering questions... especially if its something I have to look up cuz then I just further my skills!

You can display the cake at the beginning and then take it back into the kitchen but: The hotel may not have the space to accomodate your cake in the fridge. The more you move the cake, the more likely an 'accident' can happen. Having the cake move from one temp to another and back again isn't really good for keeping things stable, icing wise.

Personally, I'd like a grand entrance for the cake and keeping it away from all my little cousins fingers.

As for the fresh flowers, what type of flowers are you thinking of using? You can only place the flowers on top of the cake, do not stick them directly into the cake. They make special 'flower picks' to insert into the cake or if you want, have the florist use tape to wrap the stems before putting them into the cake.

To be honest, I've never heard of flowers bleeding onto a cake before. I've been asking my fellow bakers and nobody has had this experience either. I'll keep checking around though..

Hi everyone!

Here's a disclaimer I need to point out:
When I said it took me 48 hours to make that cake, I didn't mean two days! I meant 48 hours spread over about 5 days. And as for the charges, those are what I would charge in my country as a non-professional. I put the numbers up mostly just to point out that most bakers aren't making HUGE profits off people ordering wedding cakes. We actually work for (what in my country is) almost minumim wage... and shop people don't make much more. (And with friends in SG, I know this is also true for my future home.)

Phew! Now as a bride myself, I will be ordering a cake that is 8kg. I'm catering for about 120. Total cost: S$550.00 (I don't expect everyone to spend as much as me. Don't worry.)

Please feel free to ask me any questions. I can only tell you what I know from experience but Sue75 is willing to share her experience with me and I can pass that on to you.

PS. Do not ask me for price quotes from Sue75.

I do not want to be banned from this board so I will not pass on that type of info.

Bubblepearl,

I'm actually getting my cake from Patisserie. Their style matches my own personal preferences and some of their cakes in their portfolio match some of the techniques I want for my own cake.

That being said: We're going for a cake tasting so if its not so nice, we can change our mind.

Also, we have to pay a 'plating fee' at our venue since we're bringing in the cake.

Hi all,

For those looking for real wedding cakes, can try Pat and Felcor. My friend have hers done there and all of us loved it!

Their cakes are simply delicious! And the wedding cakes designs are so sweet looking. Check them out!

Here is their website: www.pnfpastry.com

Lys,

Yes that's the shop that I am considering. The plating fee for FS is $3 per person.
kao_scared.gif

I don't know if I'll go with Patisserie or with the hotel's cake. I haven't seen what the hotel can do.. but I'm willing to pay the price difference if Patisserie is substantially better. (The hotel is also charging me $10 more per kg than Patisserie so the price difference isn't that great.)

hi all,

i got my wedding cake from Patissier (www.thepatissier.com). Cost me about $400+

I like it cos the outer layer of white choc is not so sweet and there is cherry in the inner chocolate cake.

After cake cutting, the cake is served in the buffet line (it's a lunch buffet wedding party) togehter with the rest of the desserts so everybody gets to eat some of it.

The hotel keep the top layer for me to bring home. Loved my cake so much. No regrets havign it and the guests loved it too.

Hope you all have a wonderful wedding and a nice WEDDING cake to cut and eat... yum yum *still thinking abt the cake, make me hungry*

Squeakers,

I think you could try to bargain with the Hotel coordinator to waive the charges/plating fee. I did so with mine so don't hv to pay extra.

Btw, the cake in picture is melting hehehe.. cos it was there for a good 1 hr before i cut it but the outer choc is solid.. so no effect on the cake, only look a bit wet hehehe...

Also, my guests were 200pp, but there are other 4-5 cakes n other desserts on the buffet line, so I guess they are sufficient
happy.gif

The sad thing was to see the unfinished dishes and cake in the buffet table being 'thrown'... so wasteful... too bad cannot da-bao...

Bubblepearl,

FS is Four Seasons. I'm having my wedding banquet there.

Viv,

Unfortunately the Four Seasons is notorious for not giving out perks or being willing to negotiate for anything. I've already managed to negotiate for some things which makes me more fortunate than most FS brides, but they won't budge on the plating fee. Oh well.

I do like your cake though and thanks for the pic! Its nice to see some of their actual works that's not in their portfolio. I'm really looking forward to meeting with them to discuss my cake.

Hi Squeakers,
I love the cake you posted there! It's the sort cake I like to have at my wedding hehe. My sis often buys cakes from The Patissier and they're really good. I've decided to go for cupcakes in the end as the search for a good bakery proved to be a difficult task with our budget. My FH managed to find somewhere that does 100 cupcakes for less than $300 and it comes with a nice stand as well! Not sure how it would taste but I don't think you can get bad cupcakes.

Hi Ashley, I've sent you an email

I don't want to hijack this thread so anyone who's interested in the cupcake contact please please email me at tinkytonk@ gmail.com

Hi girls,

Can anyone give me any idea. Our hotel r giving us Chocolate or Cake for our favours. To my idea i dun really like it. Thinking of giving chopstick or magnets. We count it cost us abt 400+ for 250 tables! Can anyone feel it better to use the money for real cake or favours? So headache..

hi jenny,

if your $400+ can buy a wedding cake that can feed your guests as a dessert, then why not? (but with your budget then its quite tough to feed 250 pple). else favors will be nicer cos pple can keep.. take some time to source for the numerous ideas off the internet

u may find some good deal somewhere

Hello Beenz,

When was your wedding? We intend to get a six-tiers cake from them and they quoted us $1200. But we reckon maybe we don't need that many tiers.

beenz

bing,
my wedding is 18th this month. so we haven't got our cake yet. the cake don't intend to serve to all. we will cut the cake and then lets the banquet staff to finished cutting for us and then will be place on the buffet table for selfservice. so its first come first serve.
so ur 6-tiers is intend to serves all?

Susan,

Why not put the cup cakes for cake cutting first and after cutting, put them in the buffet line?
That's what happened on my wedding.
