Rest assure, the food is great at Sheraton! I think for food, u do not need to worry much.
The +++ is calculated this way: eg. take $638 (the price of 1 table) x 1.1 (service charge) x 1.01 (CESS) x 1.04 (GST), u would arrive at ard $737 (nett price). To save time, u probably want to x 1.1554 to all the prices that u are quoted in. That saves the trouble of having times so many components.
Mine is a sit-down 7 course chinese lunch. Our parents do not like the idea of a buffet lunch. In fact, my in-laws do not like a banquet lunch at all, they prefer a dinner, but we managed to convince them coz our ceremony is very early in the morning, and there's not much for us to do in the afternoon. Besides it's a Sunday so we prefer to hold the banquet in the afternoon so that guests can go back early to prepare for work the next day and we have a little more time to have a dinner with family or close friends after that. Or simply a romantic candlelight dinner for two, instead of hitting the bed straight and snoring next after the late dinner.
We agreed by a min. of 30 tables, and the seat covers are FOC automatically without us asking. As for beer, it's never free flow at ST, unless there's a promo. We got a barrel free, coz our lunch does not come with any beer. Even for dinner, it's tough to get free flow. For lunch, usually the consumption of beer isn't that high, so even if u have to open another barrel, it's not exactly that much money. So try to get 1 barrel free by forgoing some of the freebies that they give, or simply by having more tables. If that 1 barrel (90 glasses) is really not sufficient, then u may get house pours by the glass, so that you do not need to waste the remainder if u do not finish the second barrel. We are serving wine and some hard liquor too, so I guess, the consumption of beer won't be that great.
Generally, it's not tough to negotiate with ST, I do not know about others, but the perks are almost offered to us, without us asking. Our coordinator told us that if we have more tables, it's easier for them to bend the rules coz the break even point is lower coz operating cost is relatively lower now, meaning that they can reap in more profits, so that puts us in a better position to ask for more perks.
