Chocolate, yes only for VIP and bridal table. They will plate the food out in the kitchen then serve to the 2 tables. If all guests individually plated, then they need lotsore staff on the kitchen to help plate and also to serve. It it also more time consuming. Imagine they take 15 mins to all 30 tables. But then if individually serve they will need at least 5 times that time for each course. Chinese dishes are cooked as a bug plate in the kitchen then to plate out a dish into 10 portion. That is a lot more time and manpower needed.
As for the piano, last time think they don't allow until you rent it. You can try to ask. But from experience, no one will pay attention to the pianist during cocktail.
