Grand Copthorne Waterfront Hotel

OK, I think I'll just upload the photos and a quick description of the dishes individually. Remember you can always speak with the chef to adjust each dish to your preference.

Deluxe Cold & Hot Combination Platter
The platter came with California maki (not bad), yam balls (very good), squid pasta (squid good, pasta not), abalone (not bad) and some other fish based stuff. All were yummy, but we'll remove the pasta from the squid.

Braised Shark’s Fin with Conpoy, Crabmeat & Bamboo Pith
Despite having real chunks of crabmeat (there were floating chunks of crab leg meat), the soup was bland, which we feedback to the chef.

They served this with red vinegar, but my family has a preference for black, which we have requested.

Roasted Crispy Chicken flavored with Nam-Yee Sauce

This was the best crispy chicken ever! The deep fried curry leaves really lends the most aromatic of flavours to the chicken, that the nam-yee sauce is really not required at all. Not as salty as we initially expected, which is good.

There is a lot of garlic in this dish, which some might find overwhelming.

561690.jpg

Steamed Live Prawn with Chinese Herbs

If only I could pump in the heavenly smell of this through the internet to you. The herbs are actually ginseng and red dates, both of which kill most of the heavy fish smell associated with seafood.

The prawns themselves were fat and oh sooooooo juicy. When the heads were peeled off, juice squirted EVERYWHERE. The flesh was firm and fresh, each piece filling up your whole mouth as you chewed.

It was really cute that they serve this in a traditional bamboo steamer.

This is quite easily one of the best dishes.

Three Type Mushrooms & Seasonal Vegetables with Oyster Sauce

Bleh. There wasn't even a hint of oyster sauce in this one, which we also feedback to the chef.

The mushrooms were good though and the broccoli wasn't overcooked. The presentation was also quite pretty.

561697.jpg

Steamed Fresh Pomfret in Japanese Shiro Miso Soup

The fish was fresh and flesh was firm. The miso soup had a bit of spiciness in it, which we thought might have been from the assorted coloured chillis they had tossed in.

Fried Glutinous Rice wrapped in Bean Curd Skin

This had to be the best dish EVER! My grandmother and mum both swooned at the puff of fragant haebe (dried baby prawns), mushrooms and glutinous rice when their chopsticks broke open the beancurd skin. It's a little heavy for the 2nd last dish, but it left the biggest impression with the older folk.

Here's how it was served to us, with some rocket lettuce.

561703.jpg

Chilled Coconut Pudding topped with Almond Seeds served with Mango Sauce

This dessert is really cute in presentation. The pudding is shaped in a heart, dressed in a tangy mango sauce. Unfortunately, it was still too sweet and we'll probably change this to something else. Quite unique and probably suitable for weddings with a lot of children and people with a sweet-tooth.

Thanks Melissa for posting!
Hmmm..yrs is e wkday menu ya? from what you say, v tempted to take e fried glutinous rice in beancurd skin...bt not available in wkend menu...

Hi treegirl,

You mean there is a difference between the weekday and weekend menu?

Btw, can I check if you meet up with June florist before or after you confirm the room decor with the banquet manager? I met up with June florist yesterday but it is kinda hard to select the type and color of flowers when I duno the room decor.

Does anyone know what are the themes available for 2008?

Thanks in advance.

treegirl: No problem! ^_^ Mine is actually a weekend wedding. Don't worry about swapping various dishes around from the weekend or the weekday menus, and just discuss it when your coordinator. It just so happened that we wanted less conventional dishes for our lunch, and thus decided on these dishes.

Janet: I confirmed the linens before going to the florist. You may wish to schedule a quick meet with your coordinator to decide the linens first.

Hi Melissa,

That was very informative on the food, thanks for the posting! I did not take their food tasting , just select the food out from the pics. Was contemplating to choose between the prawns or the yam basket. Any comments? Has anyone tried their Hashima before? GCW use that to replace it with sharkfin if the customer do not like sharkfin. Was thinking if i should change it as some of my colleagues/friends do not take sharkfin.

Hi jojo.. i had my wedding at GWC about a year ago and I had the yam basket for food tasting. It wasn't very nice and we choose the prawns instead. The prawns are really yummy!

hehe jojo,
i oso thinking of whether choosing prawns or yam basket.

Hmmm, maybe shld really choose prawns since so highly recommended. Jus worried tt if prawns, then ppl most prob wont want to peel, then will left a lot of food.

Hi treegirl,

There is another prawn dish that we tried during foodtasting. It is called Baked Prawn wrapped in Bacon with Honey Sauce + Stired Fried Prawn with Assorted Pepper in Spicy Sauce. For this dish, the the prawns are already shelled and its a combination of 2 type of tastes. Nice!!

Btw anyone tried the udon?

Hi Melissa, how much is it going to cost per table for your wedding lunch? Meanwhile, are all the ballrooms at GWC pillarless? Thanks!

Thanks janet for e info = )
will take note...quite scared cos i decided not to arrange for food tasting also and use the free table to offset cost of dinner..
bt my dinner in jun...so dishes recommended here may not be available then also

i heard from my coordinator, they can onli give free food tasting, on saturdays weddings, for grand ballroom. maybe cos of the price per table, and also for grand ballroom, required to take many number of tables.

my coord is jeremy.. he's quite ok up to now.. I haven had my AD (in 2009) yet.. just the neg. and signing contract part.. so cant comment on how he perform during AD..

hi shice
yours is when? he gave good perks? Which room u using?
U got ur BS? me still dun know which to choose. No idea at all. Is it too late?

hi.. mine on 3 Jan 09 - grand ballroom.. perks not bad, but most prob due to the number of tables i confirmed with them - 45..

BS ah? i still haven choose BS yet.. abit lazy to go shop ard for BS.. haha.. intending to start next yr.

true. normally grand ballroom easier to bargain.
but i know Jeremy quite stern. When trying asking him for more, he will keep saying no no. Hope he can try to understand us more that we r trying to come out a huge sum of $ for banquet.no wonder my fren change coord. Bu i find him quite responsible so didnt change.

haha i also had a hard time negotiating, didnt manage to get extra perks other than those listed in the package (some her world promo, which already ended). also maybe cos i take waterfront ballroom. i really like the grand ballroom but not enough tables
sad.gif
so sad. it was my friend who intro me waterfront ballroom, and i went to see, quite nice. veri intimate because of the lounge.

Hi Melissa,

Hi Snowbells, sad to hear that but glad tt yr dinner still wont well
happy.gif

on my actual day heard that there might be an event before our dinner as well. looks like they are telling these to everybody as well.

All GCW BTB we should stand up & inform this about snowbell's unpleasant incident, they shouldnt care about making more $$ & screwed up wedding couples' big day!

just to share some information ...

my company very often booked conference room with Grand Copthorne and this week again, we will have another conference. as far as arrangement goes, we are always given up to 6pm to use the room, often at 6pm the staff will start to rush the banquet setup at the place so everytime it in a rush. they have the tables for the room set up ready outside in the reception area and will pull it in upon ending the meetings.

apparently this is often the case. i even spoke with one of the managers (we often see each other because of our frequent of the ballroom), he mentioned that if the conference or meeting does not end by 6pm, they normally don't go and chase them out until it 6.30pm still no one leaves. If you think you're going to welcome the guest at 7pm, i don't think there will be enough time.

they had a lot of ballrooms at grand copthorne so it is a popular place for business meetings. on the other hand, imagine the logistics nightmare that the managers had to face. If i did not hear wrongly, they had 11 ballrooms in the hotel.

he actually told me that when the wedding banquet got delayed or affected in any ways, they usually do some waivers so you can see it's a popular problem.

not sure if others who the banquet experience this. anyway, we often use waterfront ballroom 1/2/3 at the second level for our meetings.

hi ryan,

i am horrified to find out from you that GCW will not chase guests away till 6:30pm. most couples i know of will do their dry run around 5pm. how are they going to test the system and all if the ballroom is only ready at 6:30pm? plus setting up of the ballroom takes time. 7pm is the start of the cocktail. half an hour is definitely not enough to set up the ballroom and test run the system.

i guess my experience was especially bad as the previous event is an auction. Art auction with huge paintings, statues, sculptures all around. And to pack these auction items, movers had to have bubble wrap, cardboards etc to ensure that all items are intact. the hotel staff may be experienced in setting up the ballroom at a very short time span, but it is not possible for the movers to move the auction items at a short time span as care must be taken to ensure the auction items are properly packed. i am reali shocked at their lack of time management skills.

not too sure if there are other couples who share the same experience as me. sincerely hope there aren't. it is no joke to call the older generation and apologise. friends are usually more understanding but i can't say the same for the older generation.

thanks Jv. my dinner went smoothly enough. the service staff are indeed helpful. n of cos my wedding helpers r rather "zai". haha. if there r screw ups, they kept it from me as i was fuming mad during the cocktail. n no worries, i believe ur dinner will go smoothly too.

Personally, i will advise all couples to check with the banquet manager on the dry run time prior to AD. n repeatedly haunt them to stick to the dry run time if the previous event over run. honestly, we cannot stop the hotel from having an event before dinner as an event means profit to them. it isn't fair tt the ballroom is kept empty cos our dinner is gng to be held. but in our little ways, we can try to ensure that our wedding dinner goes through smoothly. may all couples have a beautiful wedding at GCW.

Jojo and Jv: You're welcome! I'm glad the photos and descriptions are helping. (^_^)

Allykat: For 2007, 7-course sit-down was SGD700 per table net. But the cost depends on the year, lunch vs dinner, sit-down vs buffet, no. of courses, as well as which package you will be going with. I would advise you call or email them to ask for the latest packages.

As for BTB who wishes to book the Grand Ballroom for Suns on 2008, my co-ordinator told me that they are fully booked for ALL sundays until Apr 09..

For your info, apart from Waterfront ballroom, all the other ballrooms are pillar-less.

Hope this info helps

Hwee Hwee,

It will be super cramp if it's 22 tables. My frend pop by the ballroom when there was a wedding going on during the nite and commented that it's packed like sardine with 22 tables in the ballroom. My coordinator mentioned that the max a table can accomodate is 11pax. Hope this helps.

Hi Michael, i have already cancelled my booking at GCW as I realised my initial AD (1st Feb 09) is actually 7th day of CNY (Ren-ri).. checked against a chinese calender, the date doesn't seem to be a good date.

Ivy, the price for Fri and Sat is $1009 nett. Think the banquet price website is incorrect.

I have changed my AD to 7th Dec 08 with Grand Plaza Park hotel instead.. Apparantly its a very good date and I'm just so happy that I managed to book it. For those who are looking for 25-30 tables, GPPH is really very good. High Ceiling and pillarless. Most imptantly, dun have to keep to min 30 tables and end up inviting ppl who dun really expect to be invited..
