Cooking Recipes as promised

Hi Carol,

Thanks...ya, that should be the reason, have to blame hubby as he prepared the pineapple for me...
lol.gif

Do u squeeze the juice out before cooking as stated in the recipe? I noticed the pineapple meat was really dry after squeezing out the juice...

Yes, i realised i didn't brush with egg only after i put the tart into oven...

Luckybird,
The pineapple juice need not be squueze out totally, got to retain some for cooking, so that it wouldn't be too dry!

Hmm... Do you mind sharing with us yr Christmas log cake recipe?

Hi Luckybird,

roll the cake properly to make it a log leh. BTW, my email add: [email protected]

Thanks in advance.

Hi Giggler,
The main trick is a sucessful Log cake lies in the sponge cake, it must be soft & springy so that when the sponge is been rolled, it doesn't break easily.
Another thing, it must be too thick.

I've sent you the recipes, do try it out!

Hi giggle,
It should be \image instead.

To prevent to batter from overmix, do not mis in different directions, constantly over 1 directions, & batter should be soft, when tested with finger(with air bubbles inside)

Hi Carol,

Thanks for the recipes. Will try them soon and hope they don't flop! Gng to Phoon Huat tonite to pick up some equipment - they really hv alot of stuff!

Hi Carol,

If I use half the ingredient as stated in a recipe to bake cake, do I have to adjust the baking time as well or can I follow the duration as stated?

Is baking powder the same as soda bicarbonate?

Also regarding your kueh lapis recipe, what equipment can I use to press the cake as well as ensure equal height for each layer? Will the cake layer be slightly higher as compared when it is still in batter form?

Hi checking,
You will adjust the baking time.

No, baking powder is NOT the same as soda of bicarbonate.
Bicarbonate of soda (alkali) is about four times as strong as baking powder.

You need a spatula to press it.
Yes, the cake will be silghtly higher.

13468.gif

Hi Carol,

Bicarbonate of soda is actually baking soda, right? Whenever the recipe asks for bicarbonate of soda, I use baking soda.
