Just wondering is there much difference (eg in terms of costs and perks) for wedding banquets signed during wedding fairs?

Wedding show at hotel usually offers the best perks like free flow beer, free spare room stay, and free table for every 15 etc... wedding fairs usually not much and it’s kinda of distraction Ng cos too many sales ppl come up and trying to sell ...

I would suggest that you can see what are the upcoming wedding shows. View the hotels first before the wedding show.

Once you have decided the hotel, sign it up at the wedding show. You can negotiate for more perks like free flow beer, red wine and wine wine.

You can ask for a free photobooth or upgrade to deluxe menu.
