hi to all who loves cooking/baking

i just tried this really simple (idiot proof) cake baking recipe over the weekend and the result was great...so just want to share if you are thinking of baking a little something for your loved ones over the weekend.

Ice-cream muffin recipe:

1 cup ice-cream (melted) - any kind of flavor you like..but to avoid vanilla
1 cup of self-raising flour
2 tablespoons of fine sugar
5-6 tablespoons of nutella (optional. though it gives it a rich hazenut flavor and moistness)
1 teaspoon vanilla essense
(if you'd like, can also add raisins/chopped nuts)

Method
preheat oven at 190degree
Sift self-raising flour and fine sugar in a large mixing bowl
add ice-cream, nutella (as it's quite dense, i'll spoon the nutella bit by bit and drop evenly into the mixture), vanilla essense and fold in till quite evenly mixed
put papercups in muffin baking tray and evenly distribute the mixture into the papercups (mixture shld be sufficient for 5-6 small/med size muffins)
bake at 190degree for about 15min (sometimes temp and timing might vary with different ovens)

how come u thot of using melted ice-cream? where did u get dat idea?

i nicked the idea from a recipe from a magazine (so it's not my own)..but the first time i tried the original recipe (which is just ice-cream, self-raising flour and sugar)..it tasted quite bland...so the second time round, i added in some nutella (which is my absolute FAVORITE!) and i thought it tasted so much better!

try it..it's really one of the easiest baking recipe i've used..works too!
