Refrigerate for at least 24 hours before serving. <br \/><\/p><p><b><b>Guacamole Chicken Salad<\/b><\/b><\/p><p>If you\u2019ve had traditional chicken salad before, then you know it\u2019s loaded with mayonnaise and other not-so figure-friendly ingredients. This Guacamole Chicken Salad eliminates the mayonnaise altogether, replacing it with a creamy, filling alternative: avocado.<\/p><p class=\"special\"><b>INGREDIENTS<\/b><br \/>1 boneless, skinless chicken breast<br \/>1 avocado, pitted and mashed<br \/>1 small tomato, seeded and finely chopped<br \/>1 teaspoon lime juice<br \/>1 teaspoon salt<br \/>\u00bd teaspoon garlic powder<br \/>2 tablespoons fresh coriander, chopped<br \/><br \/><b>DIRECTIONS<\/b><br \/>1. Arrange vegetables evenly on tortilla. <br \/>4. Roll tortilla tightly, and slice into small, bite-sized sections.
