Sick of your go-to veggie dishes? How about roasting your cauliflower… Ingredients: 1 tablespoon vegetable oil, 1 head cauliflower, 1 ½ cups plain Greek yogurt, 1 lime (zested and juiced), 2 tablespoons chile powder, 1 tablespoon cumin, 1 tablespoon garlic powder, 1 teaspoon curry powder, 2 teaspoons kosher salt and 1 teaspoon black pepper How to make it:... 1. Preheat oven to 400° and lightly grease a small baking sheet with vegetable oil than set aside. 2. Trim the base of the cauliflower to remove any green leaves and the woody stem. 3. In a medium bowl, combine yogurt with lime zest and juice, chile powder, cumin, garlic powder, curry powder, salt and pepper. 4. Dunk the cauliflower into the bowl and smear the marinade evenly over its surface. Lastly, place the cauliflower on the prepared baking sheet and roast until the surface is dry and lightly browned (30 to 40 mins). 5. Let the cauliflower cool for 10 mins before cutting into wedges. Quick Risotto Recipe for Breakfast you will love… Ingredients: 4 tablespoons, ½ stick butter, 4 hot Italian sausages, 1 small onion (chopped), 2 small bay leaves, 1 cup white rice, ½ cup dry white wine, 3 cups low-salt chicken broth, pinch of saffron threads, 1/3 cup freshly grated Parmesan cheese and 1/3 cup chopped fresh Italian parsley How to make it:... 1. Melt 2 tablespoons butter in large saucepan over medium-high heat. Add sausages 2. Sauté for 4 mins until onion is translucent 3. Add wine and boil until liquid evaporates 4. Add 3 cups of broth and saffron to boil 5. Reduce heat to medium-low, simmer and stir occasionally until risotto is tender 6. Discard bay leaves, mix in 1/3 cup cheese and parsley. A healthier form of pizza that’s sinfully good – Zucchini Pizza! Ingredients: 1 tablespoon olive oil, 3 zucchini cut into ¼ inch thick rounds, salt and freshly ground black pepper, 1/3 cup marinara sauce, ½ cup finely grated mozzarella, ¼ cup pepperoni minis and 1 tablespoon Italian seasoning How to make it:... 1. Preheat oven to broil. Heat olive oil in a large skillet to over medium high heat. 2. Working in batches, add zucchini and cook, flipping once, until golden, about 1-2 minutes on each side and season with salt and pepper. 3. Place zucchini rounds onto a large baking sheet. Top each zucchini round with marinara, mozzarella and pepperoni minis. 4. Place into oven and cook until the cheese has melted, about 1-2 minutes. 5. Serve immediately, sprinkled with Italian seasoning, if desired.

Ingredients: • 6 cups of mixed berries (blackberries, blueberries, raspberries and sliced strawberries) • 1 tablespoon pure maple syrup... • 1 cup raw pecans • ½ cup raw walnuts • ½ cup pitted dates • ½ teaspoon ground cinnamon Toss berries with maple syrup in a bowl, put pecans, walnuts, dates and cinnamon into a food processor and pulse until coarsely ground. Quick-fix smoothie breakfast bowl with berries & granola 2 cups almond milk ¼ cup coconut milk 1 cup frozen blueberries 1 cup frozen peaches, mango or pineapple... 1 ripe banana ½ cup fresh spinach 2 tablespoons chia seeds 1 tablespoons flax seeds 1 teaspoon vanilla extract (optional) ¼ cup granola Additional toppings: fresh fruits, nuts, coconut flakes, chocolate chips In a blender, combine the almond milk, coconut milk, frozen blueberries, frozen peaches, banana, spinach, chia seeds, flax seeds and a dash of vanilla extract if desired. Purée until smooth, about 1 minute. The smoothie should be thick, if needed, add more frozen fruit until desired consistency is reached. Pour into a bowl and top with granola and fresh fruit. An eggy perfection! Heat about ¼ inch of olive oil in a very small, heavy skillet. Heat over medium-high heat until very hot; it should just be beginning to smoke. Crack an egg into a cup or mug. When the ...oil is hot, carefully slip the egg into the oil and immediately turn the heat down to medium-low. Spoon the hot oil over the egg as it cooks. Cook for no more than a minute and a half then take the pan off the heat and remove the egg with a slotted spoon. Sprinkle with sea salt and fresh pepper and enjoy immediately! Jack Skellington Cupcakes - Inspired by this remarkable trick, these cupcakes make a sweet and nightmarish Halloween treats. What You’ll Need: • Batch of chocolate cupcakes • White buttercream frosting... • 2 toothpicks • Tube of black decorator’s icing How To Make It: 1. Frost the cupcakes 2. For each cupcake, use the tip of a toothpick to lightly etch the outline of two large Jack Skellington eyes in the frosting. 3. Slowly pipe black decorator’s icing onto the etched lines and then fill in the inner circles. Use another toothpick to spread and smooth the icing. 4. Pipe on to short lines for a nose. Next, pipe a long line across the bottom of the cupcake for the mouth. For the finishing spooky touch, randomly top the mouth with a bunch of short icing barbs.
